Lemon Ice Cream

This is a very refreshing dessert, and very easy to prepare.

It can be prepared and frozen in little individual glasses, which is what I usually like to do.  Alternatively, you can pour the mixture into a plastic box, freeze it, and scoop it out with an icecream scoop into serving bowls or icecream cones. Another option: pour the mixture into a loaf pan lined with aluminum foil or parchment paper and freeze; when preparing it this way, cut into slices for serving.

Ingredients:

  • 1 large can (280 ml or 9.5 oz) of concentrated frozen lemonade 
  • 2 containers (2 cups) whipping cream
  • 1 Tablespoon sugar (optional)

Preparation:

  1. Take frozen juice concentrate out of the freezer to defrost
  2. Whip the 2 cups whipped cream till stiff, adding 1 Tablespoon sugar while whipping, if desired.
  3. Fold in the defrosted lemonade concentrate until it is incorporated into the whipped cream.
  4. Pour into individual serving glasses, or into plastic box, or loaf pan.
  5. Cover well and freeze overnight, or till serving time.
