These patties are made of cooked couscous, and flavored with lemon juice, lemon peel, parsley, mint (na’na), etc. I also include roasted and peeled red peppers, which add flavor and color. The amounts are not important in this recipe; you can just use this basic recipe as a kind of guideline, and use your own imagination. Just make sure that you have enough eggs to bind the couscous together, so that they don’t fall apart while frying. Serve with lemon wedges.

Ingredients:
- Instant couscous, cooked according to the instructions on the package.
- salt
- pepper
- flat-leaf parsley (as much as you like) chopped.
- mint leaves (na’na), – (as much as you like), chopped
- shallot or green onion, chopped
- lemon juice
- grated lemon peel
- 1-2 eggs (or more, depending on how much couscous you used). For 150 grams (5.2 oz) couscous, I used two eggs.
- may need a bit of flour for binding the mixture
Preparation:
- Cook couscous according to instructions on package. Very easily done in microwave.
- When cooked, fluff with fork, and break up any lumps.
- Add chopped parsley, chopped mint (na’na), salt, pepper, grated lemon peel, lemon juice to taste, chopped roasted peppers (optional), eggs, chopped shallot or green onion, and flour if needed.
- Mix together and form patties.
- Before serving, fry on both sides, in hot oil (NOT deep fried) in non-stick frying pan.
- Serve with lemon wedges.
