TIPS: Baking cookies

Two tips for baking cookies:

  1. When baking cookies (any kind), I always use parchment paper (baking paper). This prevents the cookies from sticking to the baking tin, it makes it easier to remove the baked cookies, and of course it makes clean-up so much easier.
  2. When baking cookies (any kind), I ALWAYS put an extra baking tin (baking sheet) underneath the baking sheet where the cookies are baking. The extra baking sheet (tin) can be placed directly under the baking sheet where the cookies are, or further down in the oven; the reason for the extra baking sheet is that it absorbs some of the heat of the oven, and prevents the bottoms of the cookies from burning. Cookies are very delicate and they can burn easily. So, the extra baking sheet is very helpful, because who wants to eat burnt cookies!
