Whenever I make a batch of butter cookies, or tart dough for fruit tarts, I always pinch off a part of the dough, and put it in a bag, in the freezer. I often have a few little bags in the freezer filled with those reserved pieces of unbaked dough.
This way, I always have enough dough ready if I want to make a last minute small fruit tart, or some cookies.
For easy preparation in making a fruit tart, the frozen dough can be grated over the sweetened fruit, instead of rolling out the dough, which would require defrosting the dough and then the bother of rolling out…..
When using this reserved, frozen dough to make cookies, you must defrost the dough before shaping into cookies.
