This is a nice, crunchy and pleasant salad. You can make “variations on the theme” by adding, to the Kohlrabi, carrots or radishes or even turnips.
Kohlrabi is one of Dani’s favorite “munching foods” …..!

Ingredients:
- 2 peeled kohlrabies
- some snipped fresh celery leaves, optional but recommended!
- canola oil
- salt
- lemon
- vinegar
- teaspoon regular yellow mustard – optional but recommended…!
Preparation:
- Peel Kohlrabi with sharp knife.
- Cut the Kohlrabi into julienne strips (on Mandoline slicer, or by hand), or grate it, or use the Benriner Turning Slicer, if you have one.
- Add the salt, a bit of canola oil, the lemon juice and the vineagar mixed with the mustard.
- Mix well, TASTE, and adjust seasoning.
- Sprinkle snipped celery leaves on top.
- Keep in covered box till serving.
