I got the idea for these sweet potatoes from one of Aharoni’s recent cooking programs on TV; there are a few additions of my own (olive oil, garlic, thyme, and soy sauce). These sweet potatoes came out beautiful and the family loved them. This is definitely going to be a popular part of future family meals!

Ingredients:
- Approximately 6 sweet potatoes in more or less the same size, preferably long and smooth.
- 50 grams butter
- 4 Tablespoons real maple syrup
- 1/4 cup balsamic vinegar
- salt
- pepper
- thyme
- 1 teaspoon crushed garlic
- a splash of soy sauce
- a splash or two of olive oil
- 2/3 cup water
Preparation:
- Peel the sweet potatoes, and slice down the center lengthwise.
- In a little pot mix all the ingredients except for the sweet potatoes, and heat till the butter melts:
- 50 grams (about half a stick) butter
- 4 Tablespoons real maple syrup
- 1/4 cup balsamic vineagar
- salt
- pepper
- 2/3 cup water
- dried Thyme
- teaspoon crushed garlic
- a splash of soy sauce
- a splash or two of of olive oil
- Mix until the butter is melted; take off flame.
- Put the peeled and halved sweet potatoes in a pyrex one next to the other.
- Pour the marinade over them.
- Bake, medium heat, covered with aluminum foil, for about 40 minutes.
- Remove the foil and continue baking for another 10 or 15 minutes (approximate – depends on your oven).
- There will probably still be marinade in the pyrex dish; leave the sweet potatoes in the marinade for a while, till they cool and absorb more of the marinade.
- Remove to serving dish.and serve.
* You can make it in the morning and heat up in the microwave in the evening.
